Paleo Pizza Crust Recipe

Who's ready for a pizza party?🍕Don't worry, at this pizza party you can finish the night without the feeling of being overstuffed from the heavy weight of the dough. This is a paleo based pizza crust which provides a lower glycemic option. The crust is also gluten free, dairy free, and egg free. Now let's get into it.

INGREDIENTS


3 cups paleo flour blend (the blend below makes 4 cups)

- 2 cups almond flour

- 1 cup arrowroot starch/flour

- 1/2 cup coconut flour

- 1/2 cup tapioca flour


2 1/4 teaspoons xanthan gum


1 1/2 tablespoon active dry yeast


1 1/2 teaspoons coconut sugar


1 1/2 teaspoons salt


1 1/8 cups warm water (95°F)


1/4 cup & 2 tablespoons extra-virgin olive oil


As many pizza toppings as your heart desires



DIRECTIONS


Mix together the almond flour, arrowroot flour, coconut flour, and tapioca flour to make your paleo flour blend (you will have 1 extra cup blend left over). In a large bowl, whisk together paleo flour blend, xanthan gum, active dry yeast, and coconut sugar. Add the salt and whisk again until well combined. Add the warm water and olive oil and mix until dough forms. Mix on high speed until dough seems to be whipped. Form into ball, lightly cover with oil and move into oiled bowl. Seal tightly and let sit for 1 hour at room temperature. Move to refrigerator for at least 30 minutes (much easier to work with if you leave it refrigerated for a few hours or overnight).


Preheat oven to 400°F. Lightly sprinkle tapioca flour on the surface. Lightly brush oil over dough ball. Divide the dough into 2 equal sections, this makes two crusts. Roll pizza dough out to your desired size. Fold over edges to make the outer crust. Brush oil all over the top of the crust. Transfer to a metal pizza pan to bake.


Bake the plain pizza crust for 5-7 minutes at 400°F. Remove the crust from the oven. Add sauce, cheese, and as many toppings as you want. Put the pizza back in the 400°F oven for another 5-7 minutes or until the edges start to brown. Remove from oven and let cool for 5 minutes before slicing.
